Bodegas Castañeda takes rank 1 because its kitchen has sent out the same dish, albóndigas en salsa de tomate, since 1927 without diluting it for volume. Taberna La Tana ranks second on the strength of one dish alone: morcilla de Burgos, a northern Spanish sausage with no equivalent on the rest of the Andalusian tapas circuit. From there, the ranking rewards a bar with one exceptional plate over one that is merely solid across the board.
